Chocolate Chip Cookie Baked Oats

This is my favorite breakfast of all time! So easy to make ahead and enjoy before morning classes, and it also is a great afternoon snack. Vegan and packed with protein.

Makes 4 servings

Ingredients:

4 tablespoons ground flax seed

1 1/3 cup plain unsweetenend plant milk

1 1/3 cup unsweetened applesauce

1/3 cup maple syrup

2 1/2 cups old fashioned oats

1/2 cup peanut butter powder

4 scoops vanilla protein powder

4 teaspoons baking powder

1/4 teaspoon salt

chocolate chips as desired

Preheat the oven to 400 degrees F. Spray a 8×8 pan with nonstick cooking spray.

Mix the flax seed, plant milk, applesauce, and maple syrup together in a medium-sized bowl.

Mix the remaining ingredients, except the chocolate chips, together in a large bowl. Add the wet ingredients to the dry and mix together.

Add in the chocolate chips and mix.

Add the mixture to the pan and bake for about 38 minutes, or until the top begins to brown.

Store leftovers in the fridge for up to 5 days. To reheat, microwave a quarter for about 2 minutes.

Notes:

  • If you only have chocolate protein powder, you can also substitute that
